Carrot Cake Cupcakes with Cream Cheese Frosting

Happy be-lated easter everyone! I of course had to make these to celebrate yesterday. What's an Easter without carrot cake right! These were packed full of chopped walnuts and fresh grated carrots, topped with a rich cream cheese frosting.
